The chef Paul Flynn and his wife, Maire, didn't invent the idea of a world-class restaurant in a small town. But they've been doing it for more than 20 years in Dungarvan, hosting cookery-school students, visiting celebrity chefs (who talk of memorable Downeys Bar experiences for years to come) and greenway explorers. When people think of a traditional country house, they are unlikely to envisage relaxed informal dining. In 2014, we decided to break the mould and embark on a project that offered our guests an alternative, more casual dining option. The Tap Room is the culmination of this thinking, with three local businesses – Kinnegar Brewing, Sacarpello & Co and Rathmullan house, working in unison to provide a memorable dining experience. The focus here is on real stone baked pizzas courtesy of Scarpello & Co. from the outdoor wood fired pizza oven, plus a selection of Irish craft beers on tap from Kinnegar Brewery. Scarpello & Co strongly believe in using the best ingredients to complement their fresh homemade dough. The result is a pizza which would not be out of place in the finest Milanese pizzeria. Kinnegar Brewing have established themselves as one of the country’s leading micro-breweries over the past 5 years. With only a 2km journey from the brewery to our Tap Room, you won’t find a fresher pint of Kinnegar anywhere in Ireland. The relaxed atmosphere and friendly service, make this the ideal location to wind down after a walk on the beach in this idyllic location on the shores of the Swilly. Since opening in 2014, the Tap Room has proved a huge success which culminated in being named in John & Sally McKennas Guides, Top 100 restaurants in Ireland for 2015.

The Universal Restaurant Menus 2020
The International
Conor Lynam of Bierhaus, in Galway, launched the Universal, a hybrid of chic bar and small-plates restaurant, in late 2016. The head chef, Matt Davis, serves small plates with universal influences. Regular dishes include squid tentacles with miso mayonnaise, and fried nems (otherwise known as spring rolls) with a Vietnamese dipping sauce. Vegetarians will love the paneer kofta with a cashew coconut curry or the grilled fresh cheese with aubergine puttanesca and friend tempura leeks. A menu with too many influences can easily feel disorganised and unfocused, with Lynam and Davis pull off a global reach with easy-going finesse.

Kevin and Muriel Thornton’s first establishment was the Wine Epergne located in Upper Rathmines from 1989 – 1992. Thornton’s opened in Portobello, Dublin in 1995 and moved to its present location on St. Stephen’s Green in 2002.
Kevin Thornton is the great philosopher of Irish food. His passion, understanding and drive to bring excellence to the plate has made him Ireland’s highest achieving chef. He was the first Irish chef to achieve two Michelin stars. His cooking, while contemporary, is informed by the distinctive flavours of local produce, and by his vivid memories of the food of his childhood. Just as important to Kevin is the keen appreciation of nature which inspires both his cuisine and his photography. Kevin is also a food writer, teacher and photographer.
