Thornton's Restaurant (proprietors Kevin and Murie Thornton) is located on the first floor of the Fitzwilliam Hotel, 128, St. Stephen's Green,Dublin 2. It is open Tuesday to Saturday for dinner from 6pm to 9.30pm (last orders) and for lunch Thursday to Saturaday 12.30p.m. to 1.30 p.m . (last orders)
Kevin and Muriel Thornton’s first establishment was the Wine Epergne located in Upper Rathmines from 1989 – 1992. Thornton’s opened in Portobello, Dublin in 1995 and moved to its present location on St. Stephen’s Green in 2002.
Kevin Thornton is the great philosopher of Irish food. His passion, understanding and drive to bring excellence to the plate has made him Ireland’s highest achieving chef. He was the first Irish chef to achieve two Michelin stars. His cooking, while contemporary, is informed by the distinctive flavours of local produce, and by his vivid memories of the food of his childhood. Just as important to Kevin is the keen appreciation of nature which inspires both his cuisine and his photography. Kevin is also a food writer, teacher and photographer.

Over the past 20 years Nicola has worked in professional kitchens in Dublin, London and Sydney.
For the last 6 years Nicola has been teaching professional courses at Cooks Academy, her passion for teaching and passing on her craft and knowledge to her students has made her transition to front of house an easy one.
From her classical training in The Westbury and as a young Chef, competing Internationally with the Irish Culinary Team to the modern Halo Restaurant at The Morrison Hotel as a Sous Chef and finally to the Cookery school there is a wealth of experience both in food and life. Nowadays Nicola has a keen interest in alternative healthy cooking for her family and her guests.
Josef
Josef has been working in professional kitchens for more than 20 years, he swapped his passion for art and design to pursue a career in Gastronomy. He has travelled together with Nicola to Australia, London and France mastering his craft.
Originally from Malta Josef arrived in Ireland in 2002 and although has left many times to travel and work all around the world, he calls Ireland home. He has held the title of Best Chef in Kildare for 3 years, he also helped The Brown Bear to win Best Newcomer and best Restaurant a number of times. Josef has a passion for vegetables therefore seasonality plays a massive part of the Menus design.He uses modern techniques to prepare, cook and serve both meat and vegetables, where the flavour combinations and extraction of flavour have to be tasted to be believed.

Having paid her dues working in fine dining, the pastry chef Emma Spain decided to rediscover her passion for a simpler approach to cooking by opening Ubh, in early 2017. Her partner, Shane Byrne, roasts the coffee while their team of cooks, baristas and floor staff work with Spain to design a menu that changes every other week. On the roster are Dunlavin Dairy milk, Gubbeen cheese and chorizo, Toons Bridge ricotta, Garryhinch Wood mushrooms, local egg supplier Chick O'Loughlin (best name ever for an egg supplier?) and local Polish bread baker Richard Kamola. Regulars are obsessed with their mushrooms on toast with Parmesan cream, poached egg and wild garlic pesto foraged by Spain. The couple have just opened their second cafe and microroastery, Bad Habits, in Naas.

This Spanish-inspired restaurant feels more like Barcelona than Aungier Street, and the bar seating is some of the best in the city. The gildas (Spanish "lollipops" with guindilla peppers, anchovies and olives), chargrilled octopus and flan de queso are unmissable.

Knowing how fire works is a central plank of Variety Jones, a wonderful addition to Thomas Street in Dublin. The fire became central almost accidentally when Keelan and Aaron Higgs, who are brothers, couldn't get their gas hob connected. Now it's a crucial part of the wonderful cooking that's happening here.

The Wild Geese Restaurant (Proprietors David Foley and Julie Randles) is located on the main street of Adare Village, Co. Limerick. As a chef David Foley has established a reputation for excellent cuisine. He has always has a keen interest in cooking. and spent many years learning his trade in such fine establishments as The Park Hotel Kenmare, The Kildare Hotel & Country Club, the Waterside Inn, Bray, Berkshire. Stephen Bull’s Restaurant, Blanford Street, London. He then progressed to his first Head Chef position when he took over in the Hibernian Hotel Dublin 4. During his six years there, the restaurant received numerous awards including five consecutive 3 AA rosettes.
After being an employee for so long, David developed an intense ambition to start his own restaurant and once The Wild Geese became available he and Julie jumped at the chance to run their own business. It is the philosophy of the Wild geese to use the freshest of local ingredients cooked in the simplest ways to maximise the flavours and tastes of the foods being served. The restaurant, with its beautiful dolls-like settings, lends itself to a relaxing and atmospheric fine dining experience.
The restaurant is open for dinner Tuesday to Saturdays inclusive from 6.30pm. Lunch is served on Sundays from 12.30pm.
