    William trained under Master Chef Raymond Blanc at Le Manoir aux Quat’Saisons, a two-Michelin-star restaurant where the menu is described as having ‘a twist of imaginative genius’. William has brought that twist to Ireland’s south-western corner, with meat and game from the estate's farm such as woodland pork, Longueville lamb, woodcock, snipe, fresh salmon from the Blackwater River, Longueville bees honey, vegetables, fruits, herbs and oriental greens come from the three-acre walled kitchen garden on the estate. At Longueville guests can rest assured that they are getting the freshest ingredients with a menu that promotes a field to fork policy. In one word "Provenance". Even our water comes from our own wells. Only the extensive New and Old World wine list is drawn from farther afield."

    Mayfield began in April 2010 when Kevin T Byrne and Kevin D Byrne (yes – two owners with the same name!) opened their door on Terenure Road North in Dublin.

    The small building was originally a butchers shop from the early 1900’s. Already rich with character this was retained and built on using vintage tables and chairs. In 2013 the opportunity arose to expand and taking the risk they moved the restaurant into the large adjoining premises, turning the original space into a take-out deli.

    Entering Mayfield you are greeted with a gift retail space full of scarves, housewares, cards and Irish fragrance products, before entering the restaurant itself which has four unique dining spaces from the sun soaked terrace to the upstairs flamingo wallpapered Yellow Bird dining room.

    With tea served from mismatched china cups and saucers and the no nonsense menu of nourishing good food, we’re open daily for breakfast, lunch and, Thursday through Saturday, for dinner . Also keep your eyes open for our occasional special “Dinner & Show” evenings with entertainment ranging from singers to short plays.

    Mayfield has grown into Terenure’s top eatery and has become a destination for friends to meet in comfortable surroundings to catch up over great food with a menu that is accessible to everyone.

    The Clarenbridge oyster bed in Galway is situated at the mouths of the Dunkellin and Clarenbridge rivers. It consists of 700 acres of sea-bed. Oyster beds require a combination of fresh and sea water. The Clarenbridge Oyster Bed is a natural bed. It is not cultivated in any way.Like other forms of farming oysters are affected by the weather, pollution and disease but unlike farming on land you cannot treat your livestock against sickness nor can you put it into a warm barn if the winter gets too cold! It takes 3-5 years for oysters to grow to a diameter of 3″ – a marketable oyster during which time the producers risk is very high. This is one of the reasons why the cost to the consumer has risen so much over the past few years. For the technically minded, their nutritional value is: Water – 79.5%, Fat – 1.8%, Protein – 10.5%, Carbohydrate – 5.6%, Ash, sand salt – 2.47%. Vitamins – A, B1, B2, C, D, PP. Each oyster contains about 7 calories which should allow the most weight conscious among us to enjoy half a dozen or so. Oysters are considered to be an aphrodisiac. Casanova is said to have eaten them every day! While there is no evidence to uphold this theory, they certainly are a healthy food.
