The day Michael Sheary's daughter was born, in 2014, he made a promise he was going to do something to make the world a better place for her to live in. With a background in hospitality, and after several trips to the United States, he saw an opportunity for an Irish Burger joint - BuJo - with "a Michelin-starred approach to sourcing and sustainability". He hired Grainne O'Keefe (of Clanbrassil House), and they spent two years working on the concept before BuJo opened, in early 2018. Almost every ingredient they use is Irish, with grass-fed beef and potatoes from north Dublin and burger buns from Kildare. They operate fully on renewable electricity, all packaging is compostable and even staff uniforms have been sourced ethically. Their commitment to sustainability was rewarded with a three-star rating from the Sustainable Restaurant Association last year - the only burger restaurant in the UK and Ireland to have received its highest award.

The cooking has evolved into a unique, mature and personal style strongly influenced by the producers of local vegetables and cheese.
The early cafe-style dining room design was intended to emphasise the effect of serving top-class food in a casual atmosphere, The restaurant has been refurbished – not once, but twice – in 2009. While retaining the relaxed atmosphere, the room is now a more elegant, intimate and comfortable space, and more in keeping with the qualities of the food coming from the kitchen. The first refurbishment was done with this in mind, the second was forced on Cafe Paradiso when it was a victim of the massive floods in Cork city in November 2009.
Cafe Paradiso It was voted ‘Best Restaurant in Munster’ by the readers of ‘Food & Wine’ magazine in 2001, and Denis Cotter was voted ‘Chef of the Year ’ by the same magazine in 2005. The restaurant was also voted ‘Restaurant of the Year’ by Les Routiers Ireland in 2004.

Situated on Middle Street in Galway city, the award-winning Cava Bodega showcases the very best of Spanish food and wine, in particular the global phenomena of tapas.
JP and Drigín first opened Cava in 2008 in Dominick Street and relocated to Middle Street in 2013. With the relocation came an opportunity to invigorate the restaurant. JP, working with local farmers and artisan producers, created a new focused menu taking the best from local and Iberian influences.
