Abstract
The stitching technique is a style of final moulding highly hydrated bread dough to maximise elasticity, while at the same time improving shape and gas retention in the dough. This video was made at home and shot over my shoulder, to give a clear view of the process. A narrative explaining the folding technique is given during the moulding.
