Abstract
Process technique for the twisted chocolatine, a variety of which won the author silver medal at the Coupe du Monde Chocolatine in Toulouse, France 2019. This instructional video is a camera on the table view, with closeups and narrative explaining every step of the process for producing excellent pastry results.
