This is a collection of audio interviews with many of the people who were instrumental in developing haute cuisine in Ireland. Edited transcriptions of the interviews are provided. This material was collected by Dr. Mairtin MacConIomaire as part of his doctoral research. We are anxious to attach photographs to the interviews and would be grateful for any help that the public can give us in sourcing these photographs
