The 2nd S. Pellegrino Sommelier Scholarship LIVE final took place recently at the DIT Teaching and Learning Bar, Cathal Brugha Street, Dublin 1. This initiative between the DIT School of Culinary Arts & Food Technology and Stafford Lynch Ltd offered hospitality students the unique opportunity to improve their sommelier skills in harmonizing water, wine and food to create a fine dining experience for their guests. Water continues to be one consumed the most, it’s the beverage that best accompanies every dish and perfectly harmonizes with all cultures. S. Pellegrino and Acqua Panna have developed a unique Water Codex to provide a clear outline of how to appreciate, serve and perfectly harmonize water with fine drinks, wine and food with the aim of completing the consumer’s pleasure on the table for a fine dining experience. The scholarship was held over two rounds attracting a huge entry in the first round (semi-finals) which were organised during the month of January and culminating in the LIVE final where the top six semi-finalists (who also received one year membership of the Irish Guild of Sommeliers) demonstrated their practical and theoretical skills in the service, tasting and harmonization of water, wine and food to a panel of expert judges.
Dr. Frank Cullen (Head of School Culinary Arts & Food Technology) congratulated the winners reminding entrants, sponsors and supporters of the DITSchoolof Culinary Arts & Food Technology of their commitment to providing on-going challenging and innovative food and beverage management programmes. Mr. Donncha Curran (Senior Brand Manager, Stafford Lynch Ltd) and Ms. Una Lynch (Director, Stafford Lynch Ltd) expressed their delight at the huge interest, professional skills and intellectual abilities demonstrated by all the participants of the 2nd S. Pellegrino Sommelier Scholarship and thanked Mr. James Murphy (DIT Lecturer & Co-ordinator S. Pellegrino Sommelier Scholarship) for organising an excellent event. The 2nd S. Pellegrino Sommelier Scholarship winners were as follows;
Overall Winner : Luke Bailey, Blue Light Bar, Barnaculla Road, Sandyford, Dublin 18 who won a 3 day all expenses trip to Italy to visit the houses of S. Pellegrino and Acqua Panna, the prize includes training sessions with the sommeliers at the famous Alma training institute. 2nd place: Daniel McCormack , won a special dinner for two in a top Dublin restaurant and 3rd Place: Orla Humphreys, The Dublin Hotel, 89/90 Gardiner Street, Dublin 1 won a special case of Frescobaldi Chianti fine wine. All three winners were also students of the DIT BSc (Hons) degree in bar management & entrepreneurship programme.
