The 4th D.I.T – Irish Distillers Pernod Ricard Cocktail Challenge took place on Thursday November 27th 2008, this initiative between the DIT Department Bar Management and Irish Distillers Pernod Ricard attracted 80 mixologists currently studying and working in the hospitality and licensed trade premises the opportunity to improve their skills in creative drinks mixing, in direct response to the growing demand for new cocktails and exciting new drinks to suit every season. This magnificent entry makes this competition Ireland’s Largest Cocktail Challenge for 2008. Overall prizes were awarded for best short drink cocktail and best long drink cocktail, which were based on Irish Distillers Pernod Ricard premium spirits and liqueurs, points were awarded for the appearance, aroma, taste and the commercial appeal of the cocktail. A further special prize was dedicated to the most professional cocktail demonstration, points were awarded in this category were awarded for the competitors appearance, hygiene awareness, their technical cocktail procedure, garnish neatness, overall proficiency and the time limits allowed to prepare and present the cocktail. Special D.I.T – Irish Distillers Pernod Ricard Cocktail Challenge Certificates of participation were presented to all the 80 mixologists by Mr. Alan Lawlor (National Accounts Manager Irish Distillers Pernod Ricard). Sincere thanks were offered to both Mr. Alan Lawlor (National Accounts Manager, Irish Distillers Pernod Ricard ), Oliver Murtagh (External Expert Judge, Past Chairman Irish Guild of Sommeliers) and competition Chairman James Murphy (Lecturer and Programme Chairman, DIT Department Bar Management). The 4th D.I.T – Irish Distillers Pernod Ricard Cocktail Challenge winners were as follows;
Winner: Best Jameson Short Drink Cocktail “Berry - Berry” Prepared by: Darran Cusack (Mulligan’s, Poolbeg Street, Dublin) Recipe: 3.5cl Havana Club Rum (3 Year Old), 1.75cl De Kuyper Banana Liqueur, 1.75cl De Kuyper Creme de Cassis, 7cl Cranberry Juice, 2 dashes Frothee (egg white). Method: Shake all the above ingredients with ice briskly. Pour over ice into an old fashioned glass. Garnish: Wheel of fresh lime.
Winner: Best Jameson Long Drink Cocktail “Havana Delight” Prepared by: Garrett Duff (The Harp Bar, North St, Swords, Co. Dublin) Recipe: 3.5cl Havana Club (3 Year Old), 3.cl Malibu liqueur, 9cl Orange Juice, 9cl Pineapple Juice, 1cl. De Kuyper Grenadine Syrup. Method: Shake all the above ingredients except the Grenadine with ice briskly. Pour into a Highball glass with ice add the Grenadine syrup last. Garnish: lime wedge, orange peel and twist of orange and long straws.
Winner: Best Technique Cocktail “Honey Lets Go Home” Prepared by: Jonathan Ganly (Four Seasons Hotel, Ballsbridge, Dublin). Recipe: 3.5cl Absolut Vanilla Vodka, 2.cl Kahlua Liqueur, 1.5.cl De Kuyper Crème De Cacao Brown, 2.cl De Kuyper Grenadine Syrup, 2cl. Honey. Method: Shake all the above ingredients with ice briskly. Pour into a chilled Martini cocktail glass. Garnish: Strawberry, cherry and orange peel..
